What do we do with all those canned goods that we stocked up on last month? Here is another recipe, which uses the cans in your pantry to a create protein- and fiber-rich meal! Who doesn’t love a meal that costs less than five bucks, takes less than 10 minutes to prepare, and lasts for a week in the fridge?
Quickest Creamiest Tomato Soup
- 1 Can tomatoes
- 1 Can chickpeas (strained and rinsed)
- ½ Cup hot water
- Pinch of cayenne pepper or red chili flakes
- ½ Tsp sea salt
In your blender, add chickpeas and tomatoes.
Blend on low, gradually add hot water, then spices. Let blend for 1 minute, (it feels like a long time, but trust me).
Add to a saucepan, season with cayenne pepper or salt.
Eat as a soup OR a fiber and protein-rich sauce for your favorite pasta!
