Kitchen Sink Hash!

Zero-waste is a hot topic in the food industry right now and for great reason. Did you know that the U.S. wastes more food per capita than any other country on the consumer level? As much as 40% of food purchased goes uneaten. Let’s be better! Having go-to recipes that allow for substitutes (like potatoes OR sweet potatoes, fresh OR canned tomatoes) will help reduce the amount of wasted or spoiled food at home. With that in mind, take a look in those crisper drawers, grab those half-used onions, an open can of beans, and dream up your favorite flavor combos for this easy 25-minute recipe that’s flexible to substitutions and is great left-over.

You will need

Anything in your fridge that needs to be used, here are some ideas:

  • Potatoes or Sweet Potatoes
  • Onions
  • Peppers
  • Beans (any kind)
  • Zucchini
  • Squash
  • Avocado
  • Greens 
  • Herbs (cilantro is amazing with this combo!)

For the best hash, you want something starchy, like potatoes, as the base, but any other veggie goes! I add beans to make a meal out of it. 

Preheat your oven to 400F.

  • Rough chop your potatoes, onions and peppers (remember, the smaller you cut them the faster they will cook)
  • Add you veggies and beans to a oil sheet pan or cast iron pan

  • Roast for 25 minutes or until potatoes are tender, (they will take the longest to cook)

 

  • Remove from oven and let cool for a couple of minutes
  • Add desired serving size to a bowl and garnish with avocado, cilantro, salt and pepper, (remember, kiddos don’t crave salt the way adults do, so try to season your food after serving their portion)
